Eco-Friendly Vegan Snack Board Recipe – Yay!EarthDay

Earth Day doesn’t typically get as much media coverage as it has this year. With travel restrictions in place and less people commuting to work, there have been huge reductions in air pollution in areas heavily impacted by COVID-19. With the improved visibility, my friend in Los Angeles can actually see the ocean from her neighborhood miles and miles away! It’s been amazing to see how simply staying at home can help improve the environment in such a short amount of time. In honor of Earth Day, I wanted to create an eco-friendly vegan snack board that highlights some of my favorite food brands that are making a difference.

Of course, I have to start with Plant Perks. Did you know that we only use fair trade cashews in our cheezes? After learning about the low wages and poor working conditions in cashew factories, it was important to us to build relationships with organic, family-owned farms. Fair trade means fair for everybody – including the environment. I used our Smoked Gouda Cheeze Spread for this vegan snack board but you can choose your favorite. I also added a container of my favorite Trader Joe’s hummus as another dip option.

I’ve had my eye on Louisville Vegan Jerky for a while. While faux meat isn’t a regular part of my diet, I love trying new vegan snacks and I’m a sucker for salty and savory ones! Their smoked black pepper flavor totally hit the spot and complemented our Smoked Gouda Cheeze Spread oh so well. Louisville Vegan Jerky is non-GMO, gluten-free, and made in small batches with locally sourced ingredients. An all around win in my opinion!

I recently ordered an Imperfect Foods box to try to limit my trips to the grocery store and couldn’t resist adding a few snack items. I got Spudsy Sweet Potato Puffs in their Vegan Cheesy Cheddar flavor and you better believe that entire bag was gone within an hour! Similar to Barnana, Spudsy turns sweet potatoes that would otherwise go to waste into delicious snacks. I LOVE this. They’re like healthy vegan cheese puffs! Hot tip: you can order free samples on their website – you just pay shipping.

As a sweet option I added a bag of Go Raw Cookie Crisps to my vegan snack board. I love Go Raw snacks not only because they’re extremely delicious and addictive but because we share a lot of the same values. Go Raw snacks are organic, vegan, non-gmo, and gluten-free. These tasty little crisps contain only four ingredients and I am obsessed! In the photo above, they’re the round cookies surrounding our cheeze spread.

I cannot tell you how much I love plantain chips. They satisfy my crunchy cravings and I feel like I’m doing the environment a favor while I snack. Did you know that 50% of all produced bananas go to waste? By partnering with farms in South America, Barnana has upcycled 85 million bananas and turned them into tasty snacks. They have also helped 350 indigenous families in the Amazon become certified organic plantain growers! How amazing is that?

The crackers you see on this vegan snack board are Back to Nature Organic Stoneground Wheat Crackers. These were incredibly delicious! They had a slightly buttery flavor to them despite being dairy-free. They paired really nicely with both the hummus and our Smoked Gouda Cheeze Spread. Back to Nature has a longtime partnership with The Nature Conservancy to support its global initiative to restore forests and curb the effects of climate change.

I can’t forget to mention fruits and veggies. So much of the produce we buy every year ends up in the trash or compost simply because we can’t use it before it expires. In fact, the USDA estimates that 30 to 40 percent of the food supply is sent to landfills. I added some clementines, radishes, carrots, and cherry tomatoes to my vegan snack board so they wouldn’t go to waste.

Cranberry Pistachio Vegan Cheese Ball Recipe


Ingredients

  • 1 package Plant Perks Smoked Gouda Cheeze Spread (or your favorite flavor!)
  • 1 container of your favorite hummus or guacamole 
  • 1 bag Go Raw Cookie Crisps (I used the ginger snap flavor)
  • 1 bag Louisville Vegan Jerky (I used the smoked black pepper flavor)
  • 1 handful of Barnana Organic Plantain Chips
  • 1 handful of Spudsy Sweet Potato Puffs 
  • 2 handfuls Back to Nature Organic Stoneground Wheat Crackers 
  • Misc. fruits and veggies nearing their expiration

Instructions

  1. Place your favorite Plant Perks cheeze spread and dips on a serving board. 
  2. Add clusters of sweet, salty, and savory vegan snacks around the spreads.
  3. Incorporate fresh veggies and fruits nearing their expiration. Tuck in some fresh herbs for delicious scent and visual interest!
