Smoky Tomato & Cucumber Vegan Gazpacho Recipe

Have you heard of gazpacho? It’s a cold tomato soup in Spanish cuisine, specifically of Andalusia (you can read more about gazpacho here). The main ingredients of classic gazpacho include tomato, green pepper, garlic, olive oil, vinegar, onion, and cucumber. Gazpacho is frequently thickened with breadcrumbs. My Smoky Tomato & Cucumber Vegan Gazpacho Recipe is fresh and flavorful and gluten-free, as I used a container of Plant Perks Smoked Gouda Cheeze Spread to thicken it up instead of bread. It lends a creamy texture and smoky flavor and I’m so happy with how it turned out! Let’s make some.

Because this is an uncooked soup, it comes together in just minutes. I started by pureeing some fresh summer tomatoes in my blender until mostly smooth; I like a little bit of texture in my gazpacho.

I then poured this mixture into a bowl to make room for the other veggies to get blitzed in the blender. Remember to add a cup of the tomato puree back to the blender to prevent the blades from jamming on the raw veggies.

Then, scoop a whole container of Smoked Gouda Cheeze Spread into the blender and blitz for another 30 seconds or so. It kind of looks like a strawberry smoothie at this point, doesn’t it?

The last step is to pour the creamy blender contents into the bowl of tomato puree and gently stir everything together. I found it easiest to ladle the soup into cups directly from my large mixing bowl. Gazpacho should be served chilled for the best and most refreshing flavor. It’s also how they enjoy this raw soup on hot summer days in Spain.

Serves 4

Ingredients

  • 2½ pounds ripe tomatoes, cored and chopped
  • ½ cucumber, peeled and chopped (reserve the other half for garnish)
  • ½ red bell pepper, seeds removed and chopped (reserve the other half for garnish)
  • ½ yellow onion, peeled and chopped
  • 1 garlic clove, peeled
  • ½ teaspoon white balsamic or red wine vinegar
  • ¼ cup fresh basil leaves
  • ½ teaspoon salt
  • Several twists of black pepper
  • 1 package Plant Perks Smoked Gouda Cheeze Spread

Instructions

  1. Place the tomatoes in your blender. Blend on high until the tomatoes are liquified; a little bit of texture is okay. Pour the tomato puree into a bowl.
  2. Place the cucumber, red bell pepper, onion, garlic, vinegar, basil, salt, and pepper in your blender. Pour 1 cup of the tomato puree back into the blender to help the motor from getting jammed. Blend the veggies until smooth. Again, some texture is fine!
  3. Scoop the Smoked Gouda Cheeze Spread into the blender and blend once more.
  4. Pour the contents of the blender into the bowl with the remaining tomato puree and stir well to combine.
  5. Divide the gazpacho between four glasses or small bowls and garnish with chopped cucumber and red bell pepper. Chill in the fridge until ready to serve.
