Raise your hand if you love vegan grilled cheese! You better believe I’m typing with one hand because my other is frantically waving above my head. I adore vegan grilled cheese, especially now that there are so many delicious gluten-free breads available. I’ve made vegan grilled cheese with all of the flavors in the Plant Perks product lineup and used my favorite in this recipe for Blackberry & Basil Vegan Grilled Cheese.
Can you guess what it is? I’ll give you a hint: it’s smoky with a buttery finish. It’s our Smoked Gouda Cheeze Spread! This flavor in particular makes amazing vegan mac and cheese and vegan grilled cheese. When a package of juicy blackberries caught my eye at the store this week, I knew I had to smoosh those berries between two pieces of bread and make a toasty sandwich. Fresh basil elevated this weekday lunch to a mind blowing level.
If you’ve never made vegan grilled cheese, it’s super easy. I don’t even bother spreading vegan butter on the sides that will hit the pan. Just add a swoosh of Smoked Gouda Cheeze Spread to both slices and top with your favorite ingredients. In this case, I used blackberries mashed with a bit of agave and fresh basil leaves. Carefully assemble the sandwich and heat it in a cast iron skillet for about five minutes on each side. Done! Who knew a vegan sandwich could be this delicious?

Makes 1
Ingredients
- ¼ cup blackberries
- 1 teaspoon agave
- 2 tablespoons Plant Perks Smoked Gouda Cheeze Spread
- 2 slices of bread
- 4 to 5 basil leaves
- 1 teaspoon olive oil
Instructions
- Combine the blackberries and agave in a small bowl. Smash the blackberries with the back of a spoon until slightly mushy.
- Spread the Smoked Gouda Cheeze Spread on both pieces of bread. Spoon the smashed blackberries on one piece and arrange the basil leaves on the other. Carefully flip the piece of bread with the basil on top of the blackberry slice.
- Heat a teaspoon of olive oil in a cast iron skillet over medium heat. Place the sandwich in the skillet and cook for 4 to 5 minutes. Carefully flip the vegan grilled cheese over and cook for 4 minutes on the other side. Slice in half and enjoy warm.
